Merry Christmas! We have officially survived Christmas. We still have 2 more Christmas get togethers, 1 on Thurs & 1 on Sat. I really enjoy this time of year but it is so busy. Today I want to try to clean the house so it at least looks presentable. With being gone a lot it seems things just pile up and don't get put away. I need to make some mixed fruit for the gathering tomorrow. I made 2 coffee cakes yesterday for tomorrow as well. It would be nice if the huge pile of laundry somehow washed, dried and folded itself. I could put it away if all that was done.
Filled Coffee Cake
4 eggs 2 c flour
1 c oil 1 teas baking powder
1 c sugar 1/2 teas salt
Mix together and put half the batter in greased 9x13 cake pan. Put 1 can pie filling any flavor on top. Spread rest of batter on top. Mix 1/4 c sugar and 1 teas cinnamon and sprinkle on top. Bake at 350 for 30 min. Drizzle with powdered sugar frosting.
I used peach and apple and both were really good.

Wow, what a crazy day today! I was planning to take the girls to mom & then go to my mother-in-law to help clean her house. Instead I was all over the road. I got a phone call at 7:30 from a neighbor. His wife had a seizure during the night and the doctor wanted them to come in asap. Mom came down and stayed with the girls till they were up and then took them to her house for the day. I took the neighbor to the doctor at 8:15. After talking to the doctor he felt they should do further tests. They got an appointment in Goshen for an MRI at 11:15. After they were done there we grabbed a bite at Burger King then headed to South Bend for a 2:00 appointment with the neurologist?. They felt very good about the doctor they saw and he gave them a lot of advice and answered a lot of questions. He also gave them the options of taking seizure meds or trying a natural course. They are going to think it over then go from there.
While I was waiting at South Bend I got a call that 2 teachers wanted to go to WalMart and pick up a few things. So I got home at 5 then fed the cat. Rachel decided to go along so she brought the girls over and we left from here. We ate at Dairy Queen then went to WalMart. On the way home we were singing Christmas Carols. We had such a good time together. Doretta & Sharon are teachers in the same school. I have been driving Sharon almost every weekend for over 2 years. I really enjoy driving both of them. On Fri. evening is their school program and they want us to come so we are planning on it. Rochelle is so excited about it!

I know it has been almost two weeks and I really was going to do better. We have been so busy with company and meetings I would almost rather scream. We had company on Sunday the 10th for dinner. I made a simple menu of goulash, corn, applesauce, celery sticks, bread, butter & jelly, ribbon salad and pumpin roll. I prepared most of the food on Fri and the casserole on Sat. All I had to do on Sun was put the casserole in the oven on time bake. When we got home from church I heated the corn, put the food into serving bowls and dinner was served. I do not stress out over having a fancy meal. I would rather do a practical and simple meal and enjoy the visiting.
Rochelle is working on her six year molars and wants to chew on everything. Maria is still working on her two year molars and is grumpy. They are both having problems with diarhea but I feel it is from the teething.
We are looking forward to a relaxing and hopefully slower time during Christmas vacation. LaVern has 1 week off and Rochelle has 2 weeks off of preschool. I would like to take a few days off from driving and try to spend some family time together, sleeping in and being lazy.
On Christmas eve we are going to have our own Christmas, exchanging gifts and just spending time as a family. We are having Christmas with my family on Christmas Day. On Dec 28th we have another Christmas gathering with the guys LaVern used to hang out with. LaVern's family is getting together on Dec.30 for brunch, an all day thing. So in short, 4 Christmas gatherings in one week= tired people and extra pounds to drag around!!

It has been a busy time in the last few weeks. We have had gorgeous weather in the mid 60's for 5 staight days. I got windows washed and we even washed the sills and the screens. We had 2 birthdays in Nov. now my baby is 2. It seems she is growing up so fast. My oldest is 4 and uite a little lady. This year we decided not to do birthday gifts but Christmas gifts instead. I have gotten a few things for Rochelle but have not found what I want for Maria. We don't have a tree but we do have other decorations up. We felt a tree with babies is not a wise choice. When the girls are older we would like to purchase an artificial tree so we can reuse it. Last week I canned vegtables, potatoes, carrots, celery & onions, and got a total of 82 jars. Most of them were 1 1/2 pint which is the amount I use for one meal. On Sun we have company coming so I have cleaning on the menu. I plan to have goulash, corn, applesauce, ribbon salad and cheesecake. Well, the cleaning is not getting done by itself so I need to run along.

I have been experimenting with some new ideas. A good twist to chicken, place chicken breasts in bottom of a cooking bag. Season to taste with choice of herbs. Pour 1 can chicken gravy over the top and bake for 45 min. or till done. I make my own gravy instead of buying it. It is also good to chunk a few potatoes and place in the bag with the chicken.

Hello Again to all my friends! It is another dreary day. I've been thinking about Thanksgiving and what it means to me personally. I have a loving family and church who care about me and how I am doing. Not everyone has great support like that. I have plenty to eat, not everyone does. I can worship God whenever I want and where I want and I don't get arrested. God truly is a great God. Take time to thank Him today and every day.

Good morning once again. It is cold and rainy here. Last night we had a mix of weather, rain ,sleet, lightning, thunder and lots of wind.
A few tips to pass along. If your dryer eats the socks like mine used to, put each persons socks in a ligerie bag.
Keep all the puzzle pieces in a zip bag then if the box gets dumped by little ones the pieces are still all there.

Another busy day ahead with driving, cleaning and maybe even some scrapbooking. A lady in our church is having a contest to see who can fininsh the most pages in the month of Oct. She is a Creative Memories consultant and is giving a 12x12 album to the winner. So far I have finished 74 pages. I need to get stickers for our wedding album then I will have another 34. I would like to finish our honeymoon pictures but need paper and stickers for that yet. I have definitely lost a few hours of sleep. I usually go back to bed when LaVern goes to work and get another 2 hours of sleep. The great thing is I only need to finish our honeymoon and then I am totally caught up which has never happened yet in the 4 years I have been doing scrapping.
I tried a new twist to chicken and we loved it. I dunked t into butter then rolled into crushed Frosted Flakes and then fried on the stovetop until done. It is a bit of sweet with crunchy and ummmm.
We are having company on Thurs. evening so cleaning is on the list of must do.

Good morning. Thought for the day: Be careful what words you speak, they last an eternity.
We have been very busy doing outside fall cleaning. I was also sick for a few days which means I did nothing for nearly a week.
This morning I made cinnamon rolls with a new recipie which I will add at the end. They are made the afternoon before then baked in the morning. The house smells so fresh and sweet!
I also have a recipie for a meat marinade. You can soak any meat and it is delicious. I have done turkey and roast and both were well liked by my family.
We have a dusting of snow on the ground and very cold. Winter seems to have come around early this year.
Here are the recipies:
Cinnamon rolls
Mix 1 T. yeast 1T. sugar 1 cup warm water and set aside
1 cup shortning 1T. salt 1 1/2cup sugar Beat together and add 4 eggs, beat again. Add 4 cupswar, water. Then add yeast mixture. Add enoughflour to make soft dough, let rise. Punch down every hour 3 to 4 times. Roll out,spread with butter, sugar and cinnamon. Roll up and cut, place in pans, let rise overnight. Bake next morning at 350 for 15 - 20 min.
I then made this frosting for the rolls.
1/2 cup butter 1 cup brown sugar Boil together for 2 min. stirring constantly. Then add 1/4 cup cream and bring to boil. Cool to lukewarm, then add 1 3/4 to 2 cups powdered sugar. If it gets to stiff add a little boiling water.
Marinade:
1 cup tenderquick
10 cups water
1 teas. salt peter
1 T liquid smoke
3 T brown sugar
Soak meat in refrigerator for 3 days then bake as usual.
Good luck to you who try these recipies. I like very simple and quick recipies as you might be able to see.

I've another new recipie to share. I revised it from the original and we gobbled it right up. Place large oven bag in 9x13 baking dish. Take 1 can chicken gravy (or make your own) and put in oven bag. Add 1-2 med potaotes, 1 small onion, 1/2# baby carrots, 2 stalks celery and arrange in bottom of bag. Place 4 chicken breasts on top (season to taste) and bake @ 350 for 40-45 min or till chicken is done. It is an easy one dish meal and yummy. Good luck.

Good afternoon. This has been a busy week. I have started planning our meals a week in advance. Last week I saved almost $20 on my grocery bill. This week I saved $35. It makes a big difference if you only buy what you need instead of getting things just in case I need it.
I made Ballard biscuits for supper one evening and the girls loved it.
Ballard Biscuits
Brown 1# hamburger and 1 small onion. Drain.
Mix in seperate bowl:
8 oz. cream cheese
1 can cream of mushroom soup
1 can cream of chicken soup
1/4 cup ketchup
1/4 cup milk
Pour over hamburger mixture and bake till bubbly.
Put 1 tube biscuits on top and bake till biscuits are brown.
I usually bake the biscuits separately then they don't get soggy if there are leftovers.
Enjoy
